There should be a way of entering multiple event attendance in the user defined fields section for event tracking. If a constituent has assisted two different events and assisted or declined either or both, you would have to make a new category for the second event. The ideal way would be to say "this constituent went to X event and assisted", he went to this other event and declined, and so forth.
